Brownies

Everyone loves New Year’s Resolutions, and everyone loves brownies. 2021 officially has started, and everyone’s New Year’s Resolutions are in full swing.
Trying to eat healthier is a common New Year’s Resolution, a task usually taken upon people trying to find a better and healthier version of themselves. Luckily for them, I have discovered a recipe for some of the best (and healthiest!) brownies that I have ever had. So now you can enjoy your favourite sweet treat without having to worry about those New Year’s Resolutions.
For all my people who love a thick, fudgy brownie, this recipe is for you. This recipe is fun, simple, and easy to bake (seriously, I burn water and can cook these just fine) and are only 140 calories per piece.
This recipe can be made with only a few simple ingredients that can be found laying around the house: Flour, cocoa powder, baking soda, salt, chocolate chips, vanilla extract, 0% greek yogurt, almond milk, and parchment paper. Any type of plain greek yogurt works, but 0% is recommended.
Some of the ingredients may sound a bit strange, but bear with me and trust the process!
Instructions:
- Preheat oven to 350F
- Whisk together flour (¾ cup), cocoa powder (½ cup), baking soda (½ tsp) and a pinch of salt
- In another bowl, melt chocolate chips (½ cup) in 30s increments in the microwave, stirring in between.
- Stir in sweetener (½ cup to ¾ cup) until smooth
- Mix in vanilla extract (1tsp) and room temperature Greek yogurt (1 cup, 0%) *I know it sounds weird but trust me* If chocolate starts to harden, warm it up a bit in the microwave.
- Add dry ingredients and just enough almond milk (⅓ cup, or to thickness) to form a thick batter
- Pour into a pan lined with parchment paper
- Bake for around 30mins
- Allow to cool before slicing
This recipe makes 8 pieces.
I used a 9×6 pan, but it should also work in a 8×8 pan, but it might not be as thick! I hope everyone enjoys these healthy, fudgy brownies! They’re just as fun to make as they are to eat!
