Instead of throwing those old, brown bananas away, put them to use in a way that is both healthy and easy to use. Banana bread can have so many different flavors and fillings, whether that be chocolate chips, nuts, or dried fruit. Banana bread is perfect for a healthy breakfast, or if you’re just craving something sweet. It is easy to bake with only a few simple ingredients. What’s better than your own personal mug of goodness?

The perfect banana bread mug cake has no oil or sugar in it, making it the perfect healthy treat.  The key is to use perfectly brown bananas. The more ripe the bananas are, the sweeter the taste. If your banana isn’t quite so ripe, then you can feel free to add a pinch of sugar for a little extra sweetness.

Make sure you use a microwave safe mug. Use half a banana for a serving, or use a full banana for two servings. Microwave for about 85-95 seconds, or to your liking.  If you double microwave it for 2 minutes, or until the center is no longer wet. Use an entire banana and double the rest of the ingredients for two servings. 

  • ½ a VERY ripe/brown banana
  • ¼ tablespoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 teaspoon sugar (optional)
  • ¼ teaspoon baking powder
  • A pinch of salt
  • 1 tsp oil of choice (optional)
  • Mini chocolate chips (or nuts)

In a cup, mash up the banana, and add the vanilla extract (and oil, if you choose to include it). Pour in the flour, sugar(optional), baking powder, and salt in a separate mug. Once combined, add the banana and vanilla mixture. Add in any additional mix-ins (chocolate chips, nuts, etc;). 

Microwave for 90 seconds, or until the top is fully cooked/golden brown. Let sit for 1 minute, or until cooled. Top with your choice of toppings (chocolate chips, ice cream, nuts, or berries. You can even add ice cream if served as a desert) and enjoy.
